Fresh Perspective to Dining Includes New Fall Menu

(Gloucester, MA – October 18, 2024) The Cut, Gloucester’s newest restaurant and multi-purpose venue, has added Justus Dunton* has joined The Kitchen team as Executive Chef.   Dunton brings over a decade of experience in kitchens from Los Angeles to Cambridge, and is creating a dining experience that is both delicious and artfully presented -a feast for all the senses. 

“The Cut has a commitment to being an integral part of our community, and that extends to what we serve our guests,” said Dunton. “We are fortunate to be able to cook with the freshest ingredients from a number of incredible local farms including Iron Ox Farm, Cedar Rock Gardens, Seaview Farm, and Twin Birch Farm, all less than 20 miles from our kitchen.”

 Dunton has created two new menus.  The Fall dinner menu served in the restaurant features farm-driven elevated comfort food.  The other is a fun and casual Street Food menu served out of the food truck window that patrons can enjoy in the music venue and gaming area. He said “No matter what you order, the goal is that when you finish your meal, you’ll feel like you got a hug from your grandmother.” 

The Fall dining menu is full of seasonal flavors on small plates such as Octopus Panzanella, and Grilled Escarole, along with main course options including Hanger Steak Au Poivre with potato strings, arugula and pickled red onions; Chicken Breast with spinach soubise, jus, radicchio, and bread crumbs (pictured left), and Maitake Mushrooms served with miso carrot purée, farro, gremolata, and crème fraiche.

The Street Food menu offers a number of “hand-held” options that are ideal when heading into the music room for a concert or playing bar games in the main room.  No need for a full table set-up to enjoy offerings like Frito Pie Chicano Style (served in a Frito bag) or Pigeon Cove Farms Kimchi brined Chicken Wings, while waiting your turn at the pool table. The Street Food menu can be ordered at the food truck window as well as in the dining room.

The Cut, a multi-purpose entertainment venue and restaurant at 177 Main Street in downtown Gloucester, MA is a 22,000 square foot facility, featuring a restaurant (capacity 150), a flexible concert space (500 general admission, 300 seated), and rehearsal and recording studios.  

“When we opened a year ago, we conceived of a facility that can serve many purposes to our community. You can come to The Cut Live and see a great show from top touring national acts like American Authors and Los Lobos to home grown musicians like Willy Alexander and Buffalo Tom,” said Managing Director Tom O’Grady.  “We’re a resource to the community and now with Chef Dunton, we will be a top destination for diners on the North Shore and we will be the premiere place to host your functions from weddings to holiday parties.”
